Jan has been testing for months now and then some sourdough, trying to make the perfect mix, bubbling in glass bowls. "Aaah the bacteria are working", the children reply when we see a lot of activity.
And then every so many weeks he starts baking. Not too often. He's also the only sourdough fan in the house so the bread is entirely for him. Nevertheless it is very cosy when the smell of fresh home-made bread fills the house.
